A simple vegetable dish, tomato capsicum with subtle spicy flavours and a delectable combination of capsicum cooked with chopped tomatoes and spice powders. Serve with roti or Parathas.

2 big tomatoes
4 capsicums
1 green chilli
1 small piece ginger (adrak)
2 tbsp oil
1 tsp chilli powder
salt to taste
1/2 tsp turmeric powder (haldi)
2 tsp coriander (dhania) powder
1/2 tsp dried mango powder (amchur)
1 bayleaf (tejpatta)
1/2 tsp asafoetida (hing)
1 tsp cumin seeds (jeera)
Method
- Half boil the tomatoes so that the cover comes out.
- Make a paste of tomato.
- In tomato paste add turmeric powder,salt,dhania powder.
- Cut the capsicum in long shreads.
- Cut ginger and green chillie in very small pieces
- Heat oil in a pan ,add green chillies and ginger ,heeng,jeera and bay leave.now add red chillie powder ,tomato paste .
- When it leave oil at the corner add capsicum and cover it for 5 min.
- Add amchoor(optional)
- Ready to serve
