The vegetable cutlet is the versatile vegetable tikki or cutlet recipe with mashed potatoes, vegetables and spices as fillings. Garnish the cutlets with imli chutney, curd, coriander chutney,chaat masala, etc and the lip smacking cutlet chaat would be ready to eat.

Makes 15 to 18 cutlets
4 medium sized potatoes , boiled and mashed
4 carrot , finely chopped and boiled
150 gms french beans , chopped and boiled
150 gms boiled green peas
1/4 tsp turmeric powder (haldi)
1/2 tsp dried mango powder (amchur)
3/4 tsp chilli powder
2 tbsp chopped coriander (dhania)
2 tbsp plain flour (maida)
salt to taste
150 gms bread crumbs for rolling
oil for frying

- Method
- Combine all the ingredients in a bowl, mix well.
- Divide into equal sieze portion and shape into flat-oval patties.
- Roll in the breadcrumbs and shallow-fry in hot oil till they turn golden brown from both the sides.
- Serve hot.
