Vegetable Kolhapuri Subzi recipe - How to make Vegetable Kolhapuri Subzi

Ingredients

1 chopped onion
1 tomato , chopped
1 potato , boiled and chopped
1 capsicum , chopped
1 carrot , boiled and chopped
1 tbsp boiled green peas
2 tbsp oil
1/4 tsp cumin seeds (jeera)
1/4 tsp garam masala
1 tbsp chopped coriander (dhania)
salt to taste
1 tsp lemon juice
1 tsp coriander (dhania) powder
1/4 tsp turmeric powder (haldi)
1/2 tsp tandoori masala and 1 teaspoon of
grind together:
1 onion
1/2 " piece of ginger (adrak)
2 red chillies
3 to 4 flakes of garlic (lehsun)
1 tomato
1 tsp sugar

    Method
  1. Heat oil, add cuminseeds, allow to splutter.
  2. Add add chopped onion, saute till tender.
  3. Add paste
  4. Add red chilli powder, dhania powder turmeric powder and tandoori masala
  5. Stirfry till oil separates.
  6. Add salt, garam masala, and 1/2 cup water.
  7. Allow to simmer for 2-3 minutes.
  8. Add all vegetables. Mix well.
  9. Cook till masala thicken enough to coat vegetables.
  10. Add lemon juice, mix, take off fire.
  11. Garnish with chopped coriander, serve hot.
