Vegetable Manchurian is a popular Chinese style cooked vegetable recipe. The vegetables are made into balls and then fried and later simmered in a soya sauce based gravy. Relish the veg Manchurian with fried rice or alone as a starter.

for the manchurians:
500 gms boiled , peeled and mashed potatoes
3/4 cup finely shredded cabbage
1/2 cup grated carrots
3 tbsp plain flour (maida)
oil to deep fry
salt and pepper to taste
for the gravy:
3 onion, grinded into a paste
2 large sized tomatoes, made into paste
3 tbsp soy sauce
3 tbsp chilli sauce
2 tbsp vinegar
1/2 cup tomato ketchup
1/4 cup finely shredded cabbage
1 spring onion, chopped
4 to 5 green chillies, cut lengthwise
2 tbsp M.S.G
salt and pepper to taste
oil as required
2 1/2 cups water

- Mix all the ingredients to form a dough.
- Shape the dough into cutlets by hand.
- Heat oil in kadahi.
- Fry the cutlets and keep aside.

- Heat oil in kadahi.
- Fry onion paste till golden brown.
- Add tomato paste.
- Fry till the paste starts leaving kadahi.
- Add 2-1/2 cup water.
- Add soya sauce, chilli sauce, vinegar, ajinomoto, ketchup, salt and pepper.
- Add shredded cabbage, separated leaves of onion, and chillis.
- Cook for 15 to 20 minutes.
- Add hot gravy to the cutlets just before serving.
