Yellow Rice recipe - How to make Yellow Rice

1 cup long grained rice (basmati rice)
4 to 5 french beans , chopped into small pieces
1 small carrot , chopped into small pieces
2 tbsp fresh green peas
2 tbsp small sized cauliflower florets
1 tsp ghee
1/2 tsp cumin seeds (jeera)
1 " stick of cinnamon (dalchini)
2 to 3 pods of cardamom (elaichi)
2 to 4 cloves (laung / lavang)
1/2 tsp turmeric powder (haldi)
a little saffron (kesar) strands soaked in hot water
a dash of coarsely crushed black pepper
a pinch of dried fenugreek leaves (kasuri methi) , crushed
1 tbsp chopped fresh coriander (dhania)
salt to taste
Method
- Wash and soak rice for 1/2 hour.
- Meanwhile cut all the vegetables.
- In a microwave bowl put the soaked and drained rice, add all the ingredients , mix with a fork. add 1 and 1/2 cups of water.
- Cover and cook for 12 minutes.
- Keep for 5 minutes and then fluff with a fork , decorate with fresh corriander leaves and serve hot with pumpkin pachadi
