For Aloo Bhuna Masala
2 cups boiled potato wedges
1/2 cup sliced onions
1/2 cup sliced capsicum
1/2 tbsp dried fenugreek leaves (kasuri methi)
3 tbsp oil
1 tsp cumin seeds (jeera)
2 cups finely chopped onions
2 tbsp finely chopped garlic (lehsun)
1 tbsp finely chopped ginger (adrak)
1 tsp finely chopped green chillies
1 tbsp finely chopped coriander (dhaania) stalks
1/2 tsp turmeric powder (haldi)
1/2 tbsp kashmiri red chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp garam masala
1 tsp chaat masala
1/4 cup whisked curds (dahi)
1/2 cup tomato pulp
salt to taste
1 tbsp butter
1 tbsp fresh cream
2 tbsp finely chopped coriander (dhania)
For aloo bhuna masala

- Mix well and cook on a medium flame for 2 to 3 minutes, until the oil is released.
- Add tomato pulp, salt to taste and ¾ cup hot water. Mix well and cook on a medium flame for 3 to 4 minutes.
- Add the sauteed veggies, butter and fresh cream. Mix well and cook further for 3 to 4 minutes.
