A chinese "bhel" topped with fried noodles, a dish which never fails at parties. Be sure that the noodles are absolutely crisp.

Makes 8 serving
For The Sauce
1/2 cup brown vinegar
1/2 cup sugar
3/4 cup water
2 tbsp plain flour (maida)
1 tbsp soy sauce
4 tbsp tomato ketchup
Other Ingredients
450 gms cabbage , cut into thin strips
3 onions , sliced
100 gms bean sprouts
10 french beans , cut into thin strips
2 carrot , cut into thin strips
3/4 cup boiled noodles
1 1/2 cups fried noodles
4 tsp oil
1 tsp chilli sauce
salt to taste

- For the sauce
- Place all the ingredients of the sauce in a vessel, mix well and put to boil. Go on cooking and stirring until the sauce is thick.
- Keep aside.

- Heat the oil in a vessel and add the vegetables. Cook on a high flame for 3 to 4 minutes.
- Add the prepared sauce, boiled noodles, chilli sauce and salt and cook for a few minutes.
- Add half of the fried noodles and mix well.
- Serve hot, topped with the rest of the fried noodles.

I simply love this recipe. My 8 yr old daughter tried it for the first time and she said it was the best dish she had ever tasted. Even my mil who doesnt like anything sweet in savoury dishes loves this recipe.

Yet again a perfect recipe by Tarla Dalal. The perfect combination of veggies alongwith boiled noodles and fried noodles to add that crunch to the dish. A more wholesome and satisfying dish to add that different touch to normal chienese meal of noodles. A sure shot winner which dont fail to impress the guests.
Although I find American Chopsuey a rather unhealthy dish due to all the fried noodles, I could not resist trying this recipe. The aroma of the fried noodles and the veggies is very appetizing! The balance between the crunchy noodles and the boiled ones is perfect.
