Sorbets, often called ‘Italian ice’, are made using fruit and sugar and have a dense and even texture. It is a part of the French classical menu and used as a palette cleanser during multi-course meals. It is made like ice cream and gelato, by slowly freezing down the ingredients while churning them constantly to create an even, consistent texture. It is different from a slushy ice or a granular granita. While a sorbet can contain milk products, unlike ice cream it does not have air whipped into it. In fact sorbets are often used as an alternative to ice cream for those on a diet because they do not contain any fat.

As a based from Konkan and has Mango farm, we had ample stock of mangoes at home throughout season. We had enjoyed making Mango Sorbet several times for our home and for our guest. That was really easy and delicious treat from Tarla Mam. Also made Anar ka Slush, Watermelon Sorbet once. That was even turned good.
