Avocado Dressing

A creamy dressing of avocado and curds spruced up with crunchy tidbits of chopped shallots, this is sure to turn any salad into a delectable treat!
You can enjoy this dressing with any salad, especially those with lettuce and juicy garden-fresh veggies. Alternatively, you can even pour it over rice and relish an off-beat treat.
Without any oil, this Avocado dressing is a very healthy alternative to fat-laden dressings.

Makes 1.50 cup
1 avocado
1/2 cup greek yoghurt or thick hung curds (chakka dahi)
3 tbsp chopped shallots
1 tsp lemon juice
1/2 tsp sea salt
- Method
- Cut each avocados in halves. Remove the seed and scoop out the center portion and mash it using a fork or a masher.
- Combine all ingredients, except the sea salt and 1 tbsp of water in a mixer and blend till smooth.
- Transfer to a deep bowl, add the sea salt and mix well.
- Refrigerate till use.
