Parsley and Garlic Dressing

An olive oil based dressing with a strong flavour, the Parsley and Garlic Dressing is perfect to perk up the flavour of any salad with veggies, fruits, beans and cheese too. Lemon juice and orange juice give this garlicky dressing a tangy dimension, while parsley gives it a herby touch.
A dash of jeera powder is all that it takes to highlight all the assorted flavours in this dressing. Make a batch of this Parsley and Garlic Dressing, and store it in an airtight glass jar in the fridge. It will last for two days.
Parsley and Garlic Dressing recipe - How to make Parsley and Garlic Dressing

Makes 0.50 cup
2 tbsp finely chopped parsley
1 tbsp roughly chopped garlic (lehsun)
1/4 cup olive oil
1/4 cup orange juice
1/2 tbsp lemon juice
1/2 tsp roasted cumin seeds (jeera) powder
1/2 tsp sea salt
- Method
- Heat the olive oil in a small non-stick pan, add the garlic and sauté on a medium flame for 30 seconds. Cool completely.
- Once cooled, blend in a mixer with all the remaining ingredients till smooth.
- Use as required.
