A spicy eggplant or brinjal(baigan) bhurta recipe with roasted brinjals mashed and cooked with onion, tomato and ginger-garlic paste. The baigan bharta recipe is just rightly spiced to suit all palates. A simple yet unique variation to a typical brinjal preparation.

Makes 4 servings
1 large brinjal (baingan / eggplant)
1/4 cup chopped onions
2 chopped tomatoes
3 chopped green chillies
2 tsp chopped garlic (lehsun)
1 tbsp chopped coriander (dhania)
1 1/2 tbsp oil
2 tsp coriander (dhania) powder
1 tsp cumin seeds (jeera) powder
1/2 tsp garam masala
1/2 tsp turmeric powder (haldi)
salt to taste
1 tbsp ghee

- Method
- Wash brinjal, make slits, apply oil and cook on a direct flame, turning the brinjal , till the skin turns dark and wrinkled.
- Peel and mash the brinjals properly.
- Heat the oil in a kadai, add the green chillies, garlic and onions and saute till they turn brown in colour.
- Add the tomatoes and saute until it turns soft.
- Add the masala powders and turmeric and salt, mix well and cook till the oil leaves the sides.
- Add mashed brinjal and coriander leaves along with 1/2 cup water, mix well and cook till the gravy becomes thick.
- Just before serving heat ghee and add to the burta, mix well
- Serve hot with phulkas.
