4 potatoes, scrubbed
4 tsp oil
1/4 cup unsalted butter
1 onion, finely cubed
1 cup carrots, blanched, peeled and finely cubed
1 cup blanched and chopped broccoli florets
1/2 cup dry sherry
1/4 cup Sour Cream
2 tsp chopped coriander (dhania)
Method
- Preheat oven to temperature 425°f. rub potatoes with oil. pierce with a fork all over. bake about 50 minutes, or until tender. melt butter in a large heavy nonstick tawa over medium heat. sauté onion and carrots 2-3 minutes, or until soft. add broccoli and sauté 3-5 minutes. add sherry and increase heat to high. boil 1 minute or until sauce thicken
