Banana Sambhariyu is a typical Gujarati preparation of bananas cooked with a special freshly-made masala that combines coconut with green chillies, ginger and spice powders.
It has a fresh aroma that is sure to kindle your appetite, and once you taste the food, the special sweet and spicy flavour of this dish is sure to make you lick your fingers contentedly.

Makes 3 servings
1 1/2 cups bananas slices
5 tbsp grated coconut
1/2 cup finely chopped coriander (dhania)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1 tbsp coriander (dhania) powder
1/2 tsp ginger (adrak) paste
1/2 tsp green chilli paste
1 tbsp besan (bengal gram flour)
1/2 tbsp sugar
salt to taste
1 1/2 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
- Method
- Combine the coconut, coriander, turmeric powder, chilli powder, coriander powder, ginger paste, green chilli paste, besan, sugar and salt in a deep bowl and mix very well with your hands.
- Add the banana slices and toss gently. Keep aside.
- Heat the oil in a deep non-stick pan and add the mustard seeds and asafoetida.
- When the seeds crackle, add the prepared banana-masala mixture, mix gently and cook on a medium flame for 2 to 3 minutes ,while stirring occasionally.
- Serve hot.
