Cabbage and Grapes Salad in A Basil Curd Dressing

Makes 4 servings
2 cups shredded cabbage
1 cup green grapes , cut into halves horizontally
1 tsp chopped celery (ajmoda)
1/2 cup cucumber cubes
salt to taste
For The Basil-curd Dressing
1 tbsp chopped basil
1/4 cup hung low-fat curds (chakka dahi)
1 tbsp low-fat cream
2 tbsp low-fat milk , 99.7% fat-free
1/2 tsp lemon juice
1/2 tsp finely grated lemon rind
2 tbsp grated apples
a pinch of sugar
a pinch of mustard (rai / sarson) powder
salt and to taste
For the basil-curd dressing

- Combine all the ingredients in a bowl and mix well. Refrigerate for atleast 30 minutes.

Cabbage and cucumber - the two ingredients used in this recipe are quite bland in flavour but the dressing with hints of basil and lemon rind perks it up very well. And green grapes add their light sweet taste to the salad. I use black grapes when is season to get contrast of colours.
