  1. Combine the onions, milk, cloves, cinnamon, green chillies, ginger and garlic in a deep non-stick pan, mix well and cook on a medium flame for 10 minutes, while stirring occasionally.
  2. Allow it to cool completely and blend in a mixer till smooth. Keep aside.
  3. Heat the oil in non-stick kadhai and add the cumin seeds.
  4. When the seeds crackle, add the fenugreek leaves and sauté on a medium flame for a few seconds.
  5. Add the onion-milk paste and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  6. Add the cauliflower and carrots, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.
  7. Serve hot.

A sneak way of making white gravy with onion and low fat milk.... So health without the unnecessary wealth of fat from cashews which usually goes in making the white gravy...also the oil used is very less in this subzi. So cent percent marks to this subzi...
