Cheese and Carrot Dip

Cheese and Carrot Dip is a creamy accompaniment for cream cracker biscuits, cucumber strips or carrot strips. You will be surprised to know that only a small quantity of cheese is used in this dip. When it combines with sweet, juicy carrots, cream, curds and milk, the outcome is heavenly. And what a difference the addition of green chillies, onions and capsicum makes to this creamy dip! The resulting flavour and texture is just awesome.

Makes 8 servings
2 tbsp grated processed cheese
1/2 cup grated carrot
1 1/2 cups thick fresh curds (dahi)
2 tbsp finely chopped capsicum
2 tsp finely chopped onions
2 tbsp milk
1 tsp finely chopped green chillies
2 tbsp fresh cream
salt to taste
For Serving
cream cracker biscuits
cucumber strips
carrot strips
- Method
- Combine all the ingredients in a deep bowl and mix well.
- Refrigerate for atleast 1 hour.
- Serve chilled with cream cracker biscuits, cucumber strips and carrot strips.

Perfect dip for cocktail parties and goes very well with crackers. Nice thick creamy dip.
