Delicious breakfast uttapam made in rice and urad dal batter mixed with cheese and cauliflower.

Makes 8 servings
For The Utappam
2 cups soaked rice
1 cup soaked urad dal (spit black gram)
2 tsp soaked fenugreek (methi) seeds
salt to taste
4 tbsp oil
For The Topping
1 cup chopped and blached cauliflower
1/4 cup chopped onions
1 chopped tomato
1 1/2 tsp chopped ginger (adrak)
2 tbsp chopped coriander (dhania)
salt to taste
4 grated cheese cubes

- For the utappam
- Blend the rice and urad dal separately in a mixer till smooth.
- Combine all the ingredients, mix well and cover and keep aside for 8 to 10 hours.

- Put a little oil on a pan and spread a ladleful of the batter and form small round pancakes.
- Sprinkle the topping evenly on the uttapams.
- Cover with a lid and cook on a slow flame till the uttapas are cooked from both the sides.
- Serve hot with chutney.
