Cheesy Spinach Dip

A very cheesy dip that tastes fab with thin and crispy Melba Toast! Ideal to serve at parties, the Cheesy Spinach Dip is made easily by combining white sauce, cheese and spinach. Perked up with pepper and chilli flakes, this wonderful dip goes down well with adults and kids alike.

Makes 1.50 cups
1/2 cup grated processed cheese
1/2 cup finely chopped blanched spinach (palak)
1 tbsp butter
1 tbsp plain flour (maida)
1 1/4 cups milk
1 tsp dry red chilli flakes (paprika)
salt and freshly ground black pepper (kalimirch) to taste
For Serving
melba toast

- Method
- Heat the butter in a broad non-stick pan, add the plain flour and cook on a medium flame for a few seconds, while stirring continuously.
- Add the milk, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
- Add the cheese, chilli flakes, spinach, salt and pepper, mix well and cook on a medium flame for another 1 minute.
- Serve immediately with melba toast.
