I am sure all the Chivda lovers will enjoy this ` CHIVDA RICE. A quick and easily prepared rice. Take care cooked rice is not mushy, each rice grain of the cooked rice should be separate. Cook the rice with salt, 1 teaspoon ghee and 1 teaspoon lemon juice.

Chivda Rice recipe - How to make Chivda Rice

Preparation Time:    Cooking Time:    Total Time:    Makes 2 serving

Ingredients

1 1/2 cups cooked rice
2 tbsp peanuts
1 tbsp cashewnuts (kaju)
2 tbsp roasted chana dal (daria)
2 tbsp raisins (kismis)
1 tbsp sesame seeds (til)
10-12 flakes of dry coconut (kopra)
6-8 curry leaves (kadi patta)
1 tsp mustard seeds ( rai / sarson)
1 tsp fennel seeds (saunf)
2 green chillies , chopped
2 dry red chillies , broken
1/2 tsp red chilli powder
1/2 tsp turmeric powder (haldi)
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp black salt (sanchal)
2 tsp chivda masala powder (readily available) (optional)
1 tsp chaat masala
1/2 tsp dried mango powder (amchur)
2 tsp sugar
1/4 cup fried sliced onions
2 tbsp oil

For The Garnish
coriander (dhania) leaves , chopped
fresh coconut , grated
nylon sev
pomegranate
lemon wedges

Method
    Method
  1. Heat oil in a broad non-stick pan, add the mustard seeds.
  2. When the seeds crackle add peanuts, cashewnuts, coconut flakes and roast till light brown in colour.
  3. Add the dariya, curry leaves, green chillies, red chillies, raisins, fennel seeds, sesame seeds and saute till well roasted.
  4. Add red chilli powder, turmeric powder, coriander-cumin seeds powder, black salt, chivda masala (optional), chaat masala , mango powder and mix well.
  5. Add cooked rice, salt, sugar, fried onion slices and toss well.
  6. To serve, place the chivda rice on a serving plate and garnish with nylon sev, coriander, grated coconut and pomegranate.
  7. Serve hot with a lemon wedge.
