Coconut Ball Cookies, No Bake Quick Eggless Cookies

These are soft cookies that can be made instantly. You just need to mix, shape and refrigerate to get semi-set cookies that just melt in your mouth.
The Coconut Ball Cookies combine the mild sweetness and mellow flavour of coconut with the tanginess of orange juice. While crushed coconut biscuits form the core of this biscuit, part of the excitement comes from a coating of desiccated coconut, which gives a nice icy-flaky mouth-feel when chilled.
These cookies also have a nice buttery taste, which appeals to everybody. Serve this unique treat with evening tea or at a party .

Makes 19 cookies
2 1/4 cups coarsely crushed coconut biscuit
1/2 cup soft butter
1/4 cup orange juice
1/4 cup powdered sugar
desiccated coconut for coating
- Method
- Combine biscuit, butter, orange and powdered sugar in a big bowl, mix very well.
- Divide the mixture into 19 equal portions and roll out each portion into a ball.
- Roll the prepared cookies in desiccated coconut till they are evenly coated from all sides.
- Refrigerate all cookies for 30 minutes and serve.
