Cucumber Snack

Cucumber snack, a scrumptious, hassle-free, no-cooking snack, which can be whipped up any time of the day. I have used low-fat paneer and curds to reduce the calories without compromising the taste. Adding dill leaves and green chilli paste perks up the flavour while cucumber makes it rich in fibre and paneer and curds add to the calcium and protein content.

Makes 6 servings
4 medium cucumber
To Be Mixed Into A Stuffing
3/4 cup crumbled low fat paneer (cottage cheese)
2 tbsp fresh low fat curds (dahi)
1 tbsp low fat milk , 99.7% fat free
1 tbsp finely chopped dill leaves
1/2 tsp green chilli paste
salt to taste

- Method
- Peel and cut each cucumber vertically into 2 and then cut each into 3 equal parts.
- Scoop out the centres of each piece using a scooper. Keep aside.
- Stuff each cucumber piece with 1 tsp of the prepared stuffing.
- Serve immediately.
