A wholesome and filling soup that features a puree of carrot, potatoes and onions flavoured with curry powder. While milk imparts richness to this soup, chopped onions sauteed in butter imparts a welcome crunch. The curried carrot soup is quite pleasing to the palate and sumptuous too.

Curried Carrot Soup recipe - How to make Curried Carrot Soup

Preparation Time:    Cooking Time:    Total Time:    Makes 4 servings

Ingredients

1/2 tsp curry powder
2 cups roughly chopped carrot
1/2 cup roughly chopped onions
1/2 cup roughly chopped potatoes
1 tbsp butter
1/4 cup finely chopped onions
3/4 cup milk
salt to taste

Method
    Method
  1. Combine the carrot, onions, potatoes and 3 cups of water in a deep pan and cook on a medium flame for atleast 10 minutes or till the vegetables are cooked.
  2. Allow the vegetables to cool and blend in a mixer to a smooth purée. Keep aside.
  3. Heat the butter in a deep pan, add the onions and sauté on a medium flame for 1 minute.
  4. Add the curry powder, carrot purée, milk and salt, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.
  5. Serve hot.

A wonderfully hearty whole meal soup made using carrot and potato..Milk adds protein as well as calcium while carrot is rich in vitamin A

tonight i just made the other kind of carrot soup i learnt from this site.i wish i had seen this recipe earlier that i could have learnt and done new for weekend
