  1. Combine the ginger, garlic, green chillies, mint leaves, coriander leaves and blend in a mixer till smooth. Keep aside.
  2. Combine the coconut, cashewnuts, curds and blend in a mixer till smooth. Keep aside.
  3. Heat the oil in a pan and add the onions, green chillies, whole garam masala and curry leaves and saute till the onions turn golden brown.
  4. Add the ginger-mint paste and saute for 2 mins.
  5. Add the coriander powder, turmeric powder and salt, mix well and saute till the oil leaves the sides.
  6. Add the eggs and toss well.
  7. Serve hot.
