Makes 3 servings
1 1/2 cups chopped cluster beans (gavarfali)
a pinch of baking soda
2 tbsp coconut oil or oil
1/2 tsp cumin seeds (jeera)
2 tsp ginger-green chilli paste
1 tsp crushed garlic (lehsun)
1/2 cup finely chopped onions
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/4 tsp mustard (rai/sarson) powder
1/2 tsp chilli powder
salt to taste
- Method
- Combine the cluster beans, baking soda and enough water in a deep non-stick pan, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally. Drain and keep aside.
- Heat the oil in a broad non-stick pan and add the cumin seeds and sauté on a medium flame for a few seconds.
- When the seeds crackle, add the ginger-green chilli paste and garlic and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flamefor 2 minutes.
- Add the cooked cluster beans, turmeric powder, coriander powder, mustard powder, chilli powder and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Serve gavarfali ki sukhi sabzi hot with bajra roti.

- In a deep non stick pan, put 1 1/2 cups chopped cluster beans (gavarfali).
- Add a pinch of baking soda.
- Add enough water as we are going to cook gavar fali.
- Mix well.
- Cook on a medium flame for 5 to 7 minutes, while stirring occasionally.
- Drain.
- Keep aside. Cooked gavar fali.

- Add 1/2 tsp cumin seeds (jeera).
- Sauté on a medium flame for a few seconds.

- Add 1 tsp crushed garlic (lehsun).
- Sauté on a medium flame for a few seconds.
- Add 1/2 cup finely chopped onions.
- Sauté on a medium flame for 2 minutes.
- Add the cooked cluster beans.
- Add 1/4 tsp turmeric powder (haldi).
- Add 1/2 tsp coriander (dhania) powder.
- Add 1/4 tsp mustard (rai/sarson) powder.
- Add 1/2 tsp chilli powder.
- Add salt to taste. We added xx tsp salt.
- Mix well.
- Cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Serve gavarfali ki sukhi sabzi hot with bajra roti.

Gavar ke subzi yadi garam roti ke saath khane ka maza aagaya
This subzi of gavarfali is spicy and masaledaar. Apart from the regular gavarfali subzis.. this subzi with onions and spices gives a wonderful taste.
I really really liked this sabzi. I normally never eat gavar and find it slightly bitter, but this sabzi was really nice. I added a little chat masala and amchoor to the curd mix.
