For Pumpkin Potato Sabzi
1 cup red pumpkin (bhopla / kaddu) cubes
1 cup potato cubes
2 tbsp ghee
2 bay leaves (tejpatta)
1 cinnamon (dalchini) stick
2 cloves (laung / lavang)
2 cardamoms (elaichi)
1 tsp nigella seeds (kalonji)
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp fenugreek (methi) seeds
1/2 cup chopped tomatoes
2 tbsp curd (dahi)
1/4 tsp asafoetida (hing)
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp turmeric powder (haldi)
salt to taste
1/2 tsp dried mango powder (amchur)
1/2 tsp sugar
For pumpkin potato sabzi
- For pumpkin potato sabzi
- To make {span class="bold1"}pumpkin potato sabzi{/span} heat the ghee in a deep non-stick kadhai, add the bay leaves, cinnamon, cloves, cardamom, nigella seeds, mustard seeds and fenugreek seeds and sauté on a medium flame for 1 minute.
- Add the tomatoes, asafoetida, mix well and cook on a medium flame for 1 minutes, while stirring occasionally.
- Add the pumpkin, potatoes, curds, chilli powder, coriander-cumin seeds powder, turmeric powder, salt, ¾ cup of water and mix well.
- Cover and cook on a medium flame for 10 minutes or till the vegetables are cooked.
- Add the dried mango powder and sugar, mix well and cook on a medium flame for 1 minute, while stirring occasionally.

Its very good combination...the only variation that I did is I added pumpkin later when potatoes are more than half cooked as adding them together makes pumpkin like mashed ones.
