Makes 10 sqaures
2 tbsp whole wheat flour (gehun ka atta)
1 tbsp ragi (nachni / red millet) flour
2 tsp jowar (white millet) flour
2 tsp bajra (black millet) flour
2 tsp besan (bengal gram flour)
2 tsp maize flour (makai ka atta)
2 tsp rice flour (chawal ka atta)
1/4 tsp turmeric powder (haldi)
1/4 tsp chilli powder
1 tbsp curds (dahi)
1/4 cup , boiled and mashed potatoes
1 tbsp finely chopped coriander (dhania)
1 tsp oil
salt to taste
whole wheat flour (gehun ka atta) for rolling
ghee for cooking
Method
- Method
- Mix all the flours in a bowl, add all the other ingredients and knead into a soft dough, adding water as required.
- After 20 minutes, knead the dough again using little oil till smooth.
- Equally divide the dough into 4 portions.
- Roll out each portion into a thin circle using whole wheat flour.
- Cut into different sized squares using cookie cutters.
- Cook each paratha square over a tava (griddle) using little ghee till both sides are golden brown in colour.
- Serve hot.
