Grapefruit, Coconut and Peanut Salad

The healthy good fat in this snack keeps your energy levels high for a long time, while the low glycemic index grapefruit keeps you satiated for long without raising your blood sugar levels.

Makes 2 servings
1 cup grapefruit segments
1/4 cup grated coconut
1/4 cup roasted and coarsely crushed peanuts
1 tsp honey
1 tsp finely chopped coriander (dhania)
salt and to taste

- Combine all the ingredients in a deep bowl and toss well.
- Refrigerate for at least 1 hour and serve chilled.

Peanuts have the right and healthy fat with protein, while coconut is always good for your health. You will stay fit and lean by having this salad.
