A delicious and different paratha made with a stuffing of chana dal. Serve hot with curds or chutney.

Ingredients


For The Filling
225 gms green gram
salt to taste
1/4 tsp turmeric powder (haldi)
1 onion , finely chopped
1/2 tsp finely chopped ginger (adrak)
4 green chillies , finely chopped
1/4 cup finely chopped coriander (dhania) leaves
1/4 tsp garam masala
1 tsp dried mango powder (amchur)

For The Dough
4 cups whole wheat flour (gehun ka atta)
1 tbsp ghee
salt to taste

Method
For filling:

  1. Soak the greem gram in 2 cups of water for 15- 20 minutes. Drain and keep aside.
  2. Boil 2 cups of water in a deep pan, add the green gram, salt and turmeric, mix well and cook on a slow flame, till the dal becomes tender.
  3. Drain the excess water, remove from the flame and cool completely.
  4. Add the remaining ingredients, mix well and mash the dal lightly.
  5. Divide the filling into 12 equal portions and keep aside.

  1. Combine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.
  2. Divide the dough into 12 equal portions and keep aside.

How to proceed

  1. Roll out a portion of the dough into a circle of 4” diameter.
  2. Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
  3. Roll out again into a circle of 6” diameter, using little whole wheat flour.
  4. Heat a tava and cook each paratha, using little oil, till golden brown spots appear on both the sides.
  5. Repeat the same steps to make 11 more parathas.
  6. Serve hot with chutney or tea.
