Healthy Carrot Muffins recipe - How to make Healthy Carrot Muffins

Ingredients


Dry Ingredients
1 cup plain flour (maida)
1 cup whole wheat flour (gehun ka atta)
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp cinnamon (dalchini) powder
a pinch of salt
1 1/4 cups sugar
2 tbsp tutti-frutti
2 tbsp crushed mixed nuts (almonds , cashew)

Wet Ingredients
curds (dahi)
1/2 cup oil
1/2 tsp vanilla essence
1 cup grated carrot

For The Toping
1/2 tsp tutti-frutti
1/2 tsp crushed mixed nuts (almonds , cashew)

Method
    Method
  1. Combine and sieve the plain flour, whole wheat flour, baking powder, baking soda, cinnamon powder and salt in a deep bowl.Keep aside.
  2. Add the nuts and tutti-frutti. Mix well.
  3. In a deep bowl add the curds, oil, vanilla essence, carrots and sugar and mix well.
  4. Add the sieved flour mixture to the curd mixture and mix well.
  5. Pour 1 tbsp of the batter into greased muffin moulds. Sprinkle the futti-frutti on top and bake in a pre-heated oven at 180°c (360°f) for 20 minutes.
  6. Cool slightly, unmould and serve immediately.
