For Healthy Schezwan Chutney
12 whole dry kashmiri red chillies
2 tsp oil
2 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
1/3 cup finely chopped onions
1 tbsp oats flour dissolved in 2 tbsp water
salt to taste
1 tsp lemon juice

- Heat oil in a broad nonstick pan, add garlic, ginger and sauté for a few seconds.
- Add onions and sauté on a medium flame for 2 to 3 minutes.
- Add the chilli mixture, oats slurry, salt to taste and lemon juice.
- Mix well and cook on a medium flame for 2 to 3 minutes. Once cooked, cool it slightly.
