For Kaddu ka Bharta
4 cups chopped red pumpkin (bhopla / kaddu)
2 tbsp oil
1 tsp cumin seeds (jeera)
1 tsp fennel seeds (saunf)
1/2 tsp nigella seeds (kalonji)
1/4 tsp fenugreek (methi) seeds
1/4 tsp asafoetida (hing)
1/2 cup chopped onions
1/2 tsp turmeric powder (haldi)
2 tsp chilli powder
2 tsp dried mango powder (amchur)
salt to taste
For The Garnish
2 tbsp finely chopped coriander (dhania)

- To make the {span class="bold1"}kaddu ka bharta recipe{/span}, heat the oil in a pressure cooker and add the cumin seeds. When the seeds crackle fennel seeds, nigella seeds and fenugreek seeds.
- Add the onions and sauté till they turn translucent.
- Add the pumpkin, asafoetida, turmeric powder, chilli powder and salt with ½ cup of water, mix well and pressure cook for 2 to 3 whistles so that the pumpkin becomes mushy.
- Add the amchur and mix well. Simmer till the oil separates from the pumpkin.
- Serve {span class="bold1"}kaddu ka bharta{/span} hot, garnished with the coriander.

Pressure cook for 2 to 3 whistles so that the pumpkin becomes a little mushy. This depends on the consistency of the bharta you want.

After pressure cooking.

Add 2 tsp dried mango powder (amchur).

Simmer on medium heat for about 2 minutes till the oil separates from the pumpkin.
