Ingredients


For The Dough
1 cup whole wheat flour (gehun ka atta)
1 tbsp oil
salt to taste

For The Karela Stuffing
1/2 cup grated bitter gourd (karela)
1 tsp cumin seeds (jeera)
1/4 cup finely chopped onions
1 tsp finely chopped green chillies
1/2 tsp ginger (adrak) paste
1/2 tsp garlic (lehsun) paste
1/2 cup boiled , peeled and mashed potatoes
1 tsp lemon juice
salt to taste

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
7 tsp oil for cooking

For Serving
fresh curd (dahi)

Method
For the dough

    For the dough
  1. To make {span class="bold1"}karela paratha{/span}, combine all the ingredients in a deep bowl and knead into a semi soft dough using approx. 5 tbsp water. Keep aside.
  2. Divide the dough into 7 equal portions.

For the karela stuffing

  1. Combine the karela and little salt in a deep bowl and mix well, cover and keep aside for 10 minutes.
  2. After 10 minutes squeeze out all the excess water by pressing it between your palms.
  3. Heat the oil in a broad non-stick pan and add the cumin seeds.
  4. When the seeds crackle, add the onions, green chillies, ginger paste, garlic paste and sauté on a medium flame for 30 seconds.
  5. Add the karela and cook on medium flame for 2 minutes.
  6. Add the mashed potatoes, lemon juice and salt, mix well and cook on medium flame for 2 minutes.
  7. Divide the karela stuffing into 7 equal portions and keep aside.

  1. To make the {span class="bold1"}karela paratha{/span}, roll a portion of the dough into a 100 mm. (4”) diameter circle using a little whole wheat flour for rolling.
  2. Put a portion of stuffing in the center of the rolled roti. Bring together all the sides in the center and seal tightly.
  3. Roll again into a circle of 125 mm. (5”) diameter circle using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle) and place the rolled paratha.
  5. Cook the paratha using a little oil till golden brown spots appear on both the sides.
  6. Repeat steps 1 to 5 to make 6 more parathas.
  7. Serve {span class="bold1"}karela paratha{/span} immediately with fresh curds.

  11. Cook on a medium flame for 2 minutes. 
  12. Add 1/2 cup boiled , peeled and mashed potatoes
  13. Add 1 tsp lemon juice
  14. Add salt to taste. 
  15. Mix well and cook on a medium flame for 2 minutes.

  1. Divide the stuffing into 6 equal portions.
  2. Divide the dough into 6 equal portions.
  3. Roll a portion of the dough into a circle of 100 mm. (4”) diameter circle using a little whole wheat flour for rolling.
  4. Roll a portion of the stuffing into a ball. Place it in the centre of the rolled dough and press lightly.
  5. Start pulling the sides to the centre. After pulling all the sides in the centre, pull off the extra dough. Seal tightly and flatten the stuffed dough.

  10. Again flip the aloo paratha and smear more 1 tsp oil or ghee over it and let it cook.

I liked this recipe as I am a diabetic. The karela did not taste so bitter as I expected. Also i liked the idea of tamarind water which took away all the bitterness. The saunf gave a good flavor.
