Kosambri recipe - How to make Kosambri

Makes 4 servings
1/2 cup moong dal (split green gram)
1/2 cup grated carrot
1/2 cup grated cucumber
2 tbsp finely chopped coriander (dhania)
finely chopped green chillies to taste
salt to taste
For The Tempering
1 tsp oil
1/4 tsp mustard seeds ( rai / sarson)
1/4 tsp white urad dal
1/4 tsp chana dal (split bengal gram)
2 to 3 whole dry kashmiri red chillies
For The Garnish
freshly grated coconut
lemon juice

- Method
- Clean, wash and soak the moong dal in water for 20 minutes.
- Drain and keep aside.
- Add the carrots, cucumber, green chillies, coriander and salt and mix well.
- For the tempering, heat the oil in a kadhai and add the mustard seeds, urad dal and channa dal.
- When the seeds crackle, add the red chillies and saute for 10 seconds.
- Remove from the flame and add this tempering to the moong dal mixture and mix well.
- Garnish with coconut and lemon juice.
