How to make low fat carrot halwa

  1. Before we begin making the low fat carrot halwa recipe | healthy gajar ka halwa |  low fat Indian carrot pudding | clean and wash the carrots. Make use of tender, juicy, firm red carrots to get that naturally sweet gajar ka halwa.
  2. Peel it using a scraper and discard the skin. To get 2 cups of grated carrot we have used 4 medium-sized carrots.
  3. Grate the carrots using a box grater. You can use the shredding disc on your food processor but do not grind the carrots in a blender. Keep aside.
  4. To make low-fat gajar halwa, heat the ghee in a pressure cooker. Ghee imparts a wonderful flavor to the gajar halwa
  5. When the ghee melts, add the carrots.
  6. Sauté on a medium flame for 5 minutes, while stirring occasionally.
  7. Add ¾ cup of milk. This being a healthy, low-fat gajar ka halwa, we are making use of low-fat milk. If you want to make this dairy-free and vegan, you can use full-fat coconut milk and coconut oil instead of ghee but it sure won’t taste that good.
  8. Add dates. Khajur is naturally sweet, rich in minerals and fibers. It is the best alternative for sugar and condensed milk hence we are making use of dates to sweeten and bring together the low-fat gajar halwa
  9. Mix well and pressure cook for 2 whistles. Allow the steam to escape before opening the lid. Pressure-cooking helps in cooking the carrots quickly.
  10. Add the remaining ¼ cup of milk. You can toss in some almonds, pistachios, walnuts to make the healthy carrot halwa rich in unsaturated fatty acid.

I change servings to 10 and it change quantity of ingredients but in methods it remain same as yours. Also please elaborate little more in method like how should it look after you sauté in begging and then at last how to look if it’s done or not. Overall I love the recipe because I don’t have to stir for long time while it’s cooks in cooker. Easy recipe. Thank you

How much is one serving of halwa ?
Tarla Dalal

Karan, one serving is an estimate of what you would eat. This is a healthy Indian sweet where ghee is healthy for you. We have used dates as a sweetener in this recipe which works for diabetics also.

Tastes similar to authentic gajar halwa with a slight sweet taste of dates... But it''s a great option to add sweetness to sweets using dates instead of refined sugar. I will follow only this recipe henceforth.
