To Be Mixed Into A Dressing For Macaroni Salad With Sour Cream
1/2 cup curd (dahi)
1 1/2 tbsp fresh cream
3 tbsp milk
1/4 tsp mustard (rai / sarson) powder , readily available in the market
Other Ingredients For Macaroni Salad With Sour Cream
1 1/2 cups cooked macaroni
3/4 cup finely chopped cucumber
2 tbsp finely chopped celery (ajmoda) stalks
1/2 cup finely chopped spring onions whites
1 tbsp finely chopped spring onion greens
1/2 cup finely chopped capsicum
salt to taste

- Combine all the ingredients in a bowl, add the dressing and toss well.

For the sour cream dressing

To make the sour cream dressing for Macaroni Salad with Sour Cream, put the curd in a deep bowl.

Add the fresh cream. This gives nice creaminess.

Add milk.

Add mustard powder, You can also use mustard paste.

Mix it well using a whisk and keep aside.
For the Macaroni Salad with Sour Cream

In a deep non-stick pan, add enough water to boil the macaroni in and add the oil to it.

Now add the salt. We add the salt at this stage as it not only helps the water come to a boil faster but also gives flavor to the pasta. Generously salt the water.
- Let the water come to a rapid boil.

Once it starts boiling, add the macaroni. We have used 3/4 cup raw macaroni for obtaining 1 1/2 cups of cooked macaroni.

Cook on a medium flame for 10-12 minutes, while stirring occasionally. The macaroni should be cooked until they are al dente i.e. cooked to be firm to the bite and should not be mushy or sticky.

Drain well and throw the water away.

Refresh the macaroni under cold water. This ensures that they stop cooking.

Keep macaroni aside.

Transfer macaroni into a deep bowl.

Add the cucumber, this gives a nice crunch.

Add the spring onion whites.

Add the celery, this is optional. If you have it please add it.
- Add the spring onion greens.

Add the capsicum.

Add the salt.

Toss it well.

Finally add the prepared sour cream dressing which is a curd based dressing.
