Mashed Potatoes with Sautéed Vegetables is an elegant but sumptuous dish that has a pleasant flavour, which everybody will love.
As the name suggests, it is nothing but perfectly mashed potatoes seasoned simply with black pepper, and served with a crunchy and juicy assortment of sautéed veggies.
Soft butter and cream added to the potatoes gives it a fluffy texture and rich flavour. In fact, the veggies are also sautéed in butter, so you can sort of feel the buttery taste on your palate.
The secret to the success of this recipe lies in mashing the potatoes right. You need to place the boiled potato in a strainer, lightly break it into small pieces, and then use a spoon to mash it through the strainer.
Also make sure you serve it immediately to enjoy the perfect mouth-feel. Can be served as an accompaniment to a bowl of hot soup and toast .

Makes 4 servings
For The Mashed Potatoes
6 medium boiled and peeled potatoes
2 tbsp soft butter
1 tbsp fresh cream
salt and freshly ground black pepper (kalimirch) to taste
For Sautéed Vegetables
2 tbsp soft butter
3/4 cup diagonally cut and parboiled mixed vegetables (French beans, carrot and green peas)
1/4 cup boiled green peas
salt and freshly ground black pepper (kalimirch) to taste
For the mashed potatoes

- Mash the boiled potatoes with help of a spoon in a strainer in a deep bowl.
- Add the butter, fresh cream, salt and pepper and mix well. Keep aside.
For sautéed vegetables

- Heat the butter in a broad non-stick pan, add the mixed vegetables, green peas, salt and pepper and sauté on a medium flame for 2 minutes. Keep aside.
