Makes 2 servings
1/2 cup chopped fenugreek (methi) leaves
1 cup diced carrot
1/2 cup green peas
1/2 cup chopped capsicum
1/2 tsp coriander (dhania) powder
3/4 tsp cumin seeds (jeera) powder
1/4 tsp chilli powder
1 tsp oil
1 tsp ghee
freshly ground black pepper powder to taste
1 cup cooked rice
salt to taste

- Method
- Sprinkle little salt on methi leaves and and keep aside for 10 mins.
- Add chilli powder to it.
- Heat the oil in a kadhai, add the chilli powder, capsicums, carrots and peas , mix well and saute for 3 to 4 minutes.
- Add the fenugreek leaves and saute till the methi is cooked.
- Add the coriander powder, cumin seeds powder and salt and mix well.
- Add the rice and mix well.
- Serve hot garnished with roasted cashewnuts.
