Muscovado sugar is a type of sugar with a strong flavour of molasses. In regions where it is not available, you can use brown sugar to make the enticing muscovado sugar syrup. A common aspect of mexican cuisine, this refreshingly tangy syrup made of brown sugar, orange juice and aromatic spices, can be used on cakes, puddings, fruits or even toast!

Makes 4 servings
200 gms brown sugar
75 mm (3") piece cinnamon (dalchini)
1/4 cup of fresh orange juice
1/4 tsp aniseeds (vilayati saunf)
Method
- Method
- Combine all the ingredients in a saucepan along with 1/2 cup of water and bring to a boil, while stirring occasionally.
- Simmer over medium flame for 5 minutes.
- Use as required.
