Mushroom and Green Capsicum Subzi

There are times when you whimsically combine some odd ingredients, and it turns out so great you want to keep repeating the combination. Mushroom and green capsicum, is one such example! They get along very well together in this Mushroom and Green Capsicum Subzi, which wins in taste and nutrition. Mushrooms are rich in protein and folic acid, and the vitamin C in green capsicum ensures maximum absorption of these nutrients.

Makes 4 servings
5 cups mushroom (khumbh) halves
1 cup capsicum cubes
2 tsp oil
salt to taste
To Be Blended Into A Smooth Paste (using 1/2 Cup Of Water)
4 whole dry kashmiri red chillies , broken into pieces
6 garlic (lehsun) cloves
1/2 cup roughly chopped onions
- Method
- Heat the oil in a broad non-stick pan, add the prepared paste and 2 tbsp of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the capsicum cubes, mushrooms and salt and mix well. Cover with a lid and cook on a medium flame for 6 to 8 minutes, while stirring occasionally.
- Serve immediately.
