For Nutritious Pumpkin Carrot Soup
2 cups roughly chopped red pumpkin (bhopla / kaddu)
1 tsp oil
1 tsp dill seeds (suva dana)
1/2 cup roughly chopped onions
1 cup roughly chopped carrot
1/4 tsp salt
freshly ground black pepper (kalimirch) to taste

- Add the onions and sauté on a medium flame for 1 minute.
- Add the pumpkin and carrot and sauté on a medium flame for 2 minutes.
- Add 4 cups of water, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Blend the mixture in a mixer till smooth.
- Pour the mixture into a deep non-stick pan, add the salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
- Add a little pepper and mix well.

How to make Nutritious Pumpkin Carrot Soup

For making the pumpkin carrot soup | Indian style pumpkin carrot soup | healthy kaddu gajar soup in pressure cooker | first cut the lal bhopla into cubes and keep them ready. You need to wash the pumpkin and remove the skin & chop it into even sized cubes.

For preparing the bhopla soup, heat the oil in a pressure cooker. We have made use of vegetable oil but, you can even use olive oil or low-fat butter.

Add the dill seeds.

Sauté on a medium flame for 30 seconds. Suva dana have a potent flavor which help in enhancing the taste of the nutritious kaddu soup.

Add the onions.

Sauté on a medium flame for 1 minute or till they are soft.

Also, add the carrot. Both kaddu and gajar are high in beta carotene.

Sauté on a medium flame for 2 minutes. This recipe makes use of a handful of ingredients which are easily available. The actual flavor of this pumpkin soup comes from the kaddu and gajar itself so, it is important to sauté them nicely so, as to get maximum flavours.

Cool them slightly and transfer into a mixer jar. Blend the mixture in a mixer till smooth. We have used a hand blender as it is easier.
