Onion Soup

The pungency of sautéed onions, when balanced with mellow and creamy white sauce, turns out to be very pleasing to the palate. Easy, and made with readily available ingredients, this delectable Onion Soup is one sure-shot lip-smacker!

Makes 4 servings
1 1/2 cups onion rings
1 tbsp butter
1 cup white sauce
salt and freshly ground black pepper (kalimirch) to taste

- Heat the butter in a deep pan, add the onions and sauté on a medium flame for 1 minute.
- Add 3 cups of water and salt, mix well and cover and cook on a medium flame for 8 minutes.
- Allow the mixture to cool completely and blend in a mixer to a smooth mixture.
- Transfer the mixture into a deep pan, add the white sauce and pepper, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Serve hot.
