Peanut Chikki is a traditional sweet preparation across India and is usually made by jaggery and peanuts or ground nuts blended together. A nutritious and easy to prepare peanut chikki is a favorite among children.

Peanut Chikkis recipe - How to make Peanut Chikkis

Preparation Time:    Cooking Time:    Total Time:    Makes 17 pieces

Ingredients

1 cup roasted peanut halves (unsalted)
3/4 cup chopped jaggery (gur)
2 tsp ghee

Method
    Method
  1. Heat an aluminium kadhai on a high flame.
  2. Add the jaggery, mix well and cook on a high flame for 2 minutes, while stirring continuously.
  3. Lower the flame to slow and keep stirring continuously for 3 minutes, till it forms foam and changes the colour.
  4. Switch off the flame and keep stirring for few more seconds.
  5. Add the roasted peanuts and ghee, mix very well.
  6. Put it on a greased platform, while mixing it upside down using a flat ladle.
  7. Pat the mixture, with greased hands and roll it using a greased rolling pin to make 150 mm. (6”) diameter circle.
  8. While rolling make sure it does not stick on the platform. If it sticks, loosen it using a flat ladle, and roll again.
  9. Cut immediately using a sharp knife into equal squares. Cool completely.
  10. Break into 17 pieces and store it in an airtight container in a cool and dry place.

How long would the peanut chikki take to get spoit (shelf life), using this preparation procedure and the given ingredients?

   Dear Jacob, This is a member contributed recipe. But to the best of our knowledge, this chikki has a longer shelf like (upto a month if stored in an air-tight container) when made in winter season. But when made in rainy season, it may turn soggy or chewy due to excess moisture and when made in summer season, it may turn soggy or chewy due to excess heat. In both these later seasons, it should be stored in an air-tight container and consumed within a day or as soon as possible.
