A delicious soup made with aromatic spring onions and soothing potatoes.
The addition of lemon juice along with the regular salt and pepper seasoning enhances the flavour of the potato and spring onion soup. Should you like it spicier, add a dash of tobasco sauce.
Enjoy this soup with Chatpata Potato and Green Pea Frankie or with any other wrap for a satisfying meal.

Makes 4 servings
1 cup peeled and thickly grated potatoes
1/2 cup finely chopped spring onion (whites and greens)
2 tsp butter
1/2 tbsp lemon juice
salt and freshly ground black pepper (kalimirch) to taste

- Heat the butter in a broad non-stick pan, add the potatoes and spring onions and sauté on a medium flame for 2 minutes.
- Add 3 cups of hot water, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
- Switch off the flame, add the lemon juice, salt and pepper and mix well.
- Serve hot.
