Tava-cooked potato and green pea rolls are packed between soft whole wheat flour rotis drizzled with a tongue-tickling onion-masala water, to make these Chatpata Potato and Green Pea Frankies. Ingredients


For The Rotis
1 cup whole wheat flour (gehun ka atta)
1 tbsp oil
salt to taste
1/2 cup milk , refer handy tip
whole wheat flour (gehun ka atta) for rolling
oil for cooking

For The Potato and Green Pea Rolls
1 1/2 cups boiled and mashed potatoes
3/4 cup boiled and coarsely mashed green peas
1/2 cup grated processed cheese
2 tbsp finely chopped mint leaves (phudina)
1 tsp green chilli paste
1/2 tsp garam masala
1 tsp lemon juice
salt to taste
oil for greasing and cooking

To Be Mixed Into Onion-masala Water
1/2 cup finely chopped onions
2 tsp finely chopped mint leaves (phudina)
2 tsp dried mango powder (amchur)
1 tsp chilli powder
1/2 tsp garam masala
salt to taste
1/2 cup water

Method
For the rotis

    For the rotis
  1. Combine all the ingredients in a deep bowl and knead into a soft dough.
  2. Divide the dough into 8 equal portions.
  3. Roll a portion of the dough into a 175 mm. (7”) diameter circle using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle) and cook using a little oil till both the sides turn golden brown in colour.
  5. Repeat steps 3 and 4 to make 7 more rotis. Keep aside.

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture into 8 equal portions and roll each portion into a long oblong shape and flatten it.
  3. Heat a non-stick tava (griddle) and grease it with little oil and cook the rolls using a little oil till they turn golden brown in colour from both the sides. Keep aside.

  1. Place the roti on a clean, dry surface, spread 1 tbsp of the prepared onion-masala water and spread it evenly.
  2. Place a roll on one side of the roti and roll it up tightly.
  3. Repeat steps 1 and 2 to make 7 more frankies.

  1. The quantity of the milk may differ according to the quality of the whole wheat flour so always add little by little and make a soft dough. .

Yummy chatpata potato and green pea roll.. now my favourite.. believe me its tasty.. the stuffing with loads of cheese.. green pea.. giving it a creamy texture to the rolls.. i served this with ketchup.. and green chutney.. as i like spicy..
