This luscious potato and parsley soup is made with minimum of ingredients but the outcome is just amazing!! Potato and parsley soup falls under the category of thick soups. The method of making this creamy potato and parsley soup is very easy, if you are looking for something to relish as a light meal or something light to consume as an evening snack this is the perfect recipe. I usually make this for my kids for evening snack after they come back from school or classes and also when we prefer having a light meal for dinner.
To make potato and parsley soup, heat the oil in a deep non-stick pan; add the onions and garlic which give a unique and amazing flavor to our creamy potato and parsley soup and sauté on a medium flame for 2 to 3 minutes or till the onions are translucent. Add the potatoes and 2 cups of water and bring to a boil . Cover and cook on a slow flame for 10 minutes or till the potatoes are tender, while stirring occasionally in between . Add the parsley and cook on a slow flame for another 2 minutes. Keep aside to cool. Blend the mixture in a mixer to a smooth purée. Combine the purée with 1 ½ cups of water in a deep non-stick pan, add the salt and pepper, mix well and bring to a boil. Serve immediately. The combination of parsley and potatoes is magnificent and I bet you and your family would love this unique Indian style parsley potato soup.

1 cup peeled potato cubes
1 cup chopped parsley
1 tbsp olive oil
1/2 cup finely chopped onions
1/2 tsp crushed garlic (lehsun)
salt and powder to taste

Method for potato and parsley soup

Switch off the flame and keep aside to cool. Once cooled, transfer to a mixer jar.

Blend the mixture in a mixer to a smooth purée. Alternatively, you can also make use of a hand blender to break down the soup.

Transfer the purée in a deep non-stick pan.

Add 1½ cups of water. You can add more or less water to adjust the consistency of the soup as per your liking.

Add salt and pepper to season the soup.

yumm. l added a vegie stock cube and no extra salt and pepper. packed the parsley down but did not chop much as it got the stick whiz treatment anyway. will make again as parsley has seeded all over my garden. l think a plant in seed got into the compost bins!
I used some chicken broth instead of all water (about 2/3 broth, 1/3 water) Didn''t Pack the cup of parsley and wished I had used more. But the soup came out tasting o.k., sort of good by its own standard. The texture was fine, just needed the dash of red pepper I gave it for a little oomph.
Tried this with real doubt. Soup without stock? Thick and sumptuous it is not. I followed the method and ended up with flavoured water. Would not waste ingredients on this recipe. Sorry chef!
