Makes 1 to 2 servings
2 cups rice (chawal)
2 cups mint leaves (phudina)
1/4 cup curds (dahi)
2 ginger (adrak)
3 red chillies
1/2 cup grated coconut
10 black peppercorns (kalimirch)
salt to taste
2 tbsp ghee
2 tsp peanuts
1 tsp chana dal (split bengal gram)
5 curry leaves (kadi patta)
1 tsp mustard seeds ( rai / sarson)
3 cloves (laung / lavang)
2 cardamoms
1 tsp cumin seeds (jeera)
2 tsp lemon juice
Method
- Method
- Cook the rice in 4 cups of water in a pressure cooker and keep aside.
- Grind mint leaves, ginger, red chillies, peppercorns, coconut, curds and salt to a smooth paste.
- Heat the ghee in a deep vessel, add peanuts and roast for few seconds.
- Add the chana dal, curry leaves, mustard seeds, cumin seeds, cardamom and cloves.
- When mustard seeds stop spluttering, add the prepared mint paste and stir fry for few seconds.
- Now add the cooked rice and mix thoroughly.
- Cover and cooked for 2-3 minutes and stir in lemon juice, mix well.
- Serve hot with any raita of your choice.
