Makes 4 servings
1 cup semolina (rava)
1 cup chopped mixed vegetables ( cauliflower , carrots ,
green peas , french beans and potatoes) , blanched
1/2 cup finely chopped onions
1/4 cup finely chopped tomatoes
2 tbsp ghee
1 small stick cinnamon (dalchini)
3 cloves (laung / lavang)
2 bayleaf (tejpatta)
2 cardamoms
1 black cardamom (badi elaichi)
1 tsp mustard seeds ( rai / sarson)
1 tsp cumin seeds (jeera)
1 tsp urad dal (split black lentils)
8 curry leaves (kadi patta)
2 cashewnuts (kaju)
3 raisins (kismis)
1 tbsp finely chopped green chillies
1 tsp grated ginger (adrak)
1 tsp asafoetida (hing)
1 tbsp lemon juice
2 tsp sugar
salt to taste
For Garnish
1 tbsp finely chopped tomatoes
1 tbsp chopped coriander (dhania)
Method
- Method
- Heat the ghee in a kadhai, add the whole garam masalas, curry leaves, chillies, ginger, cashews and raisins and saute for 1 minute.
- Add the semolina and saute till the semolina turns golden pink in colour.
- Add all the vegetables, mix well and add enough water, salt, lemon, sugar, mix well and cover and cook for few minutes.
- Garnish with finely chopped tomatoes and coriander.
- Serve hot.
