Rice Waffles recipe - How to make Rice Waffles

Makes 5 serving
For The Waffle Batter
1 cup rice (chawal) soaked and ground
1/2 cup maize flour (makai ka atta)
2 tbsp sweet corn kernels (makai ke dane) parboiled and coarsely crushed
2 tbsp finely chopped sweetened pineapple
1/4 cup grated paneer (cottage cheese)
1/2 cup or more semi thick buttermilk
1 tbsp finely chopped coriander (dhania)
salt to taste
freshly ground black pepper (kalimirch) powder to taste
1/2 tsp nutmeg (jaiphal) powder
1/2 tsp baking powder
1 tbsp olive oil
For The Garnish
white butter
fresh mint leaves (phudina)
fresh strawberry
To Serve
apricot jam
hot gingered coffee
Method
- Method
- Combine all the ingredients for waffle in a deep bowl and keep aside for at least 1/2 hour. The batter should be thick and smooth.
- Heat the waffle iron and grease it with olive oil.
- Divide the batter into 5 equal portions, pour a portion of the batter in the pre-heated waffle iron and bake until light brown and crisp.
- The waffle will get crisper on cooling.
- Garnish with white butter, green mint and strawberries.
- Serve it fresh with jam and coffee.
