  1. Heat a small pan and dry roast the urad dal on a medium flame for 2 minutes. Allow it to cool.
  2. Once cooled, add all the other ingredients and blend in a mixer till smooth using 1/4 cup water. Keep aside.

  1. To make {span class="bold1"}mixed vegetable sagu{/span}, heat the ghee in a deep non-stick pan and add the mustard seeds.
  2. When the seeds crackle, add the urad dal, red chillies, asafoetida and curry leaves and sauté on a medium flame for 30 seconds.
  3. Add the onions and sauté on a medium flame for 1 minute.
  4. Add the cauliflower, french beans, carrots, capsicum, green peas, turmeric powder, salt and 1 cup of water.
  5. Mix well and cover with a lid and cook on a medium flame for 10 minutes, while stirring occasionally.
  6. Add the prepared green masala paste and ¾ cup of water, mix gently and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Serve the {span class="bold1"}mixed vegetable sagu{/span} hot garnished with coriander.

  1. Heat a small pan and add 2 tsp urad dal (split black lentils).
  2. Dry roast the urad dal on a medium flame for 2 minutes.
  3. Allow it to cool.
  4. Once cooled, add it to the mixer jar.
  5. Add 1/2 tbsp roughly chopped green chillies.
  6. Add 4 to 5 peppercorns (kalimirch).
  7. Add 2 tsp coriander (dhania) powder.
  8. Add 1/2 tsp cumin seeds (jeera).
  9. Add 1 small stick cinnamon (dalchini).
  10. Add 2 cloves (laung / lavang).
  11. Add 4 tbsp freshly grated coconut.
  12. Add 1/4 cup chopped coriander (dhania) leaves.
  13. Add ¼ cup water.
  14. Blend in a mixer till smooth. Keep aside.

  1. Heat 2 tsp ghee in a deep non-stick pan. Ghee adds a rich, buttery flavor to the vegetable sagu. It is, in reality, a high quality fat for the body and brain. Add 1 cup cauliflower florets. Cauliflower has a mild, slightly sweet flavor that complements the flavors of the other vegetables in the Sagu. Cauliflower is extremely low in carbs and therefore does not raise blood glucose levels quickly.   11.   12. Add ¼ cup chopped carrot. Carrots have a naturally sweet flavor that complements the savory flavors of the other vegetables in the sagu. Carrot is great for the eyes.They relieve constipation, lower blood pressure, have fibre and lower cholesterol.

  14. Add ½ cup green peas.
  15. Add salt to taste.

  18. Mix well and cover with a lid and cook on a medium flame for 10 minutes, while stirring occasionally.
