Satvik Aloo ki Sabji recipe - How to make Satvik Aloo ki Sabji

Ingredients

4 to 6 boiled potatoes
2 tomatoes , cut into cubes
3 green chilies , finely chopped
2 tsp ginger (adrak) paste
2 tsp mustard seeds ( rai / sarson)
2 tsp asafoetida (hing)
2 tsp turmeric powder (haldi)
2 tsp chilli powder
2 tsp coriander (dhania) seeds powder
salt to taste
1 tbsp oil
chopped coriander (dhania) for garnishing

Method
    Method
  1. Mash the potatoes and keep aside.
  2. Heat the oil in a kadhai and add the mustard seeds.
  3. When the seeds crackle, add the asafoetida and add the turmeric powder, chilli powder, coriander seeds powder, ginger paste and saute for more 2 minutes.
  4. Add the green chilies and tomatoes, mix well and saute till tomatoes turn soft.
  5. Add the salt and sauté for about 10 minutes, until the oil leaves the sides of the kadhai.
  6. Add the potatoes, mix well and add enough water to cover the mixture and boil for 2-3 minutes.
  7. Serve hot garnished with coriander.
